Example ingredients for 2-3 servings:
- 1/2 kg yoghurt
- 1 cucumber
- 2 tablespoons olive oil or vegetable oil
- 2-3 garlic cloves
- 1-2 tablespoons of ground walnuts and/or raisins
- half bundle of dill
- a pinch of salt
Directions:
Add the chopped garlic and the olive oil to the finely chopped cucumber and dill. To this mixture add yoghurt and water. Stir well and add salt. Finally, sprinkle with nuts and / or raisins. Serve cold, you can add ice. Store in a fridge. Most often it is consumed as an appetizer, but sometimes as a side dish or salad, along with the main dish. Eat with a spoon. Some people use it as a “diluent” for mastika or rakia and serve it in a glass. The dry tarator is served as a salad or garnish. As a substitute for cucumber you can use carrot or lettuce, even radishes or peas. Instead of dill you can use mint or parsley.
